Sharmoula bil lahm is a Libyan dish of cubed beef or lamb marinated in garlic, lemon, cumin, paprika and coriander, then grilled on skewers. The marinade is built from pantry spices and a little olive oil, so it asks for no special shopping, yet it gives the meat a deep, savory crust over the fire. The cayenne is easy to adjust, and a few hours in the fridge do most of the work.

Instructions

Stir the garlic, olive oil, lemon juice, cumin, paprika, coriander, cayenne, salt and black pepper together in a large bowl until you have a smooth, evenly mixed marinade.

Add the beef or lamb cubes and toss until every piece is coated. Cover the bowl with plastic wrap and refrigerate for at least 2 to 4 hours so the meat takes up the flavors.

Heat a grill or grill pan over medium-high heat. Thread the marinated meat onto skewers, leaving a small gap between the pieces so they cook evenly.

Lay the skewers on the grill and cook for about 10 to 15 minutes, turning now and then. Brush on any leftover marinade as they cook, and take them off when the meat is done to your liking.

Let the skewers rest for a few minutes, then scatter chopped parsley or cilantro over the top and serve.
