Corny Soufflé
Corny Soufflé is a baked corn side dish that needs only one appliance and six ingredients. Frozen corn goes straight into the blender with milk, eggs, sugar and salt, so there is no thawing, cutting or whisking of whites. The blended batter sets in the oven into a soft, lightly sweet custard, with small pieces of butter melting across the top. It serves six to eight and suits a holiday table.
Instructions
Heat the oven to 325°F. Coat a medium-sized baking dish with cooking spray.
Put the frozen corn, milk, eggs, sugar and salt into a blender. You do not need to thaw the corn first.
Blend on medium speed until everything is thoroughly mixed and the mixture looks uniform.
Pour the mixture into the prepared baking dish. Dot the top with the six pieces of butter, spacing them out across the surface.
Bake for 70 minutes, then serve warm from the dish.
