Honey BBQ Hot Wings
Honey BBQ Hot Wings give you the sweet tang of barbecue and the kick of buffalo-style wings in one coating. The sauce is built from tomato paste, honey, cider vinegar and hot sauce, then boiled down until it is thick enough to cling to the meat. Because the wings are fried on their own and only tossed in the sauce at the end, the skin stays crisp under the glaze.
Instructions
Season the wingettes all over with salt and black pepper.
Pour the oil into a deep pot and heat it to 350°F (175°C). Keep an eye on the temperature so the wings fry evenly.
Fry the wings in batches for 11 to 12 minutes each. Lift them out and set them on a cooling rack to drain, which keeps the skin from going soft.
While the wings fry, stir the tomato paste, honey, cider vinegar and hot sauce together in a saucepan. Do not add any of the frying oil.
Bring the sauce to a boil over medium-high heat and cook it until it has reduced to 10 Tbsp. It should look noticeably thicker than when it went in.
Take the pan off the heat and let the sauce rest for 5 minutes.
Toss the drained wings in the sauce until they are evenly coated, and serve them warm.
