Crispy Buffalo Shrimp
Crispy Buffalo Shrimp takes the flavors of Buffalo wings and puts them on shrimp with a cornmeal crust. The shrimp get a quick lemon dip, a heavy seasoning of salt and pepper, and a two-minute fry in peanut oil, which tolerates high heat well. Draining them on a rack keeps the underside from steaming, and the garlic and soy butter sauce clings to the crunchy coating. Blue cheese dressing is the classic partner.
Instructions
Stir the melted butter, hot sauce, soy sauce and minced garlic together in a bowl large enough to hold the shrimp later. Set it aside.
Dip each shrimp in lemon juice, then season both sides with the salt and pepper.
Press the seasoned shrimp into the cornmeal so they are fully coated, then let them rest for 2 to 3 minutes so the coating clings.
Heat the peanut oil to 375°F. Fry the shrimp in batches until golden brown, about 2 minutes per batch, so the oil stays hot.
Lift the shrimp out and drain them on a cooling rack rather than paper towels, which keeps the crust crisp. Toss them in the butter and hot sauce mixture while still hot, and serve warm with blue cheese dressing if you like.
