Crispy chicken is bone-in thighs marinated in Italian dressing, coated in bread crumbs, and baked until the crust browns. The dressing does two jobs at once, seasoning the meat and giving the crumbs something to cling to, so you need no eggs or flour. Removing the skin keeps the dish lean, and the crumbs take its place as the crisp outer layer. It needs only three ingredients and a single baking pan.

Instructions

Use kitchen shears to trim the skin and the fat off the chicken thighs.

Put the thighs in a container with the Italian dressing, seal it, and shake until every piece is coated. If you have the time, leave the chicken to marinate for extra flavor.

While the chicken marinates, pour the bread crumbs into a medium bowl.

Add the marinated thighs to the bowl one at a time and press crumbs over each one, topping up with more bread crumbs as needed until the surface is fully covered.

Set the breaded chicken on a cookie sheet or other baking pan. Lining the pan with parchment paper keeps the chicken from sticking and makes clean-up easy.

Bake on the center oven rack at 350°F for 45 to 55 minutes. The chicken is done when the bread crumbs are browned.
