Plain Cupcakes

Plain cupcakes need only four ingredients, and this version uses equal weights of flour, sugar, margarine and eggs, so the proportions are easy to remember. Everything goes into one bowl and is beaten together for a single minute, with no creaming step and no separate mixing of wet and dry. That makes it a good first bake for children or beginners. Swap two tablespoons of flour for cocoa and you have a chocolate batch.
Instructions
Heat the oven to Gas mark 5. Set 15 cupcake cases on a baking tray, or in a muffin or cupcake pan if you have one.
Put the flour, sugar, margarine and eggs into a mixing bowl. Mix with an electric mixer for 1 minute, until the batter is combined.
Use a spoon and a knife to divide the batter evenly among the cases.
Bake for 15 to 20 minutes. The cakes are done when they are golden and a toothpick pushed into the center comes out clean.
Take the cakes out of the oven and leave them to cool. Dust with icing sugar if you like.
For chocolate cupcakes, replace 2 tablespoons of the flour with drinking chocolate or cocoa.
