Southwest Pasta
Southwest Pasta is a quick one-pan-and-a-pot dinner that borrows its flavors from the American Southwest. Taco seasoning and salsa do the seasoning work, while black beans and corn make it filling enough to stand as a full meal. Seashell pasta is a smart choice because the shapes catch the beans and corn. It takes about 15 minutes of active cooking and tastes good served hot or cold.
Instructions
Bring 1 quart of lightly salted water to a boil in a large pot. Add the pasta and cook for 8 to 10 minutes, until it is al dente, then drain.
While the pasta cooks, heat the olive oil in a large frying pan over medium heat. Add the onion and bell pepper and cook for about 10 minutes, until they are lightly browned.
Stir in the corn, black beans, tomatoes with their juice, salsa, olives, taco seasoning, salt and pepper. Cook for about 5 minutes, until everything is heated through.
Tip the hot vegetable mixture over the drained pasta and mix well so the shells are coated. Serve warm or cold.
