Curry Fried Rice
Curry Fried Rice is a one-pan supper that turns a pot of cooked Basmati into a spiced, savoury main in about 40 minutes. The recipe uses two meats, thinly sliced sukiyaki beef and diced chicken, which brown in a minute and give every forkful some chew. Sesame oil and garlic set the base, while curry and chilli powder add heat. It makes five servings, so it suits a family table.
Instructions
Pour the cooking oil and sesame oil into a non-stick frying pan and set it over heat. Make sure the garlic is crushed and minced and the scallions are cut into 2 cm pieces before you start, because the cooking moves quickly.
Add the garlic and scallions to the hot oil and fry them until the smell turns fragrant.
Tip in the sukiyaki beef and the diced chicken. Cook them, stirring, for about 1 minute, until the meat is golden brown.
Add the soaked bean sprouts and the cooked Basmati rice, then sprinkle in the chilli powder and curry powder.
Pour in the light soy sauce and add the salt and pepper. Stir until the rice is evenly coloured by the spices and the seasoning is mixed all the way through, then serve.
