Daigakuimo (Japanese Candied Sweet Potato)
Daigakuimo is a Japanese snack of fried sweet potato glazed in a glossy sugar syrup. The glaze takes only three things, sugar, water and a little soy sauce, and the soy sauce adds a savory edge that keeps the sweetness from turning flat. Frying the potato first gives each piece a browned crust that holds up under the syrup. Toasted sesame seeds on top add a light crunch.
Instructions
Cut the sweet potatoes into bite-sized pieces, keeping them roughly the same size so they cook at the same rate.
Heat the vegetable oil to 350°F (175°C). Fry the sweet potato pieces until they are browned on the outside.
Pour the water, sugar and soy sauce into a saucepan and set it over low heat. Let the mixture bubble gently until the liquid turns sticky.
Take the pan off the heat and tip in the fried sweet potatoes. Toss them quickly so every piece is coated in the syrup before it sets.
Sprinkle the sesame seeds over the coated potatoes and serve.
