Duck Fried Rice
Duck Fried Rice swaps the usual chicken or pork for sliced duck, which gives a rice dish built on a richer, deeper meat. Butter and sesame oil share the pan, so the garlic and chillies start in a nutty, creamy fat. Red and green chillies plus habanero and black pepper make it properly hot. The whole thing comes together in about 20 minutes and feeds five.
Instructions
Put the butter and sesame oil in a non-stick frying pan and set it over medium-high heat. Let the butter melt and combine with the oil.
Add the garlic, red and green chillies, and the white parts of the scallions. Stir constantly for about 15 seconds, until the garlic and chillies smell fragrant.
Add the sliced duck, the soaked bean sprouts and the parsley. Keep stirring until the duck meat changes color.
Tip in the cooked rice, then add the soy sauce, habanero, black pepper and salt. Stir until the rice is evenly coated and everything is well mixed.
Serve the rice straight from the pan while it is hot.
