Dandahu and Beans is a one-pot Nigerian dish from the Kanuri people, built around dandahu, the leaves of Momordica balsamina, also known as balsam apple. The leafy green brings a slight bitterness that sits well against okra, beans and meat, while groundnuts add richness to the pot. It uses few ingredients and a single pan, so it is simple to put together.

Instructions

Rinse the meat, the dandahu and the okra under clean water. Put them in a pot with enough water to cover and bring to a boil for a few minutes.

Add the beans and groundnuts to the pot, then crumble in the maggi cube. Season with salt, tasting as you go.

Cook for a few more minutes, until the beans and meat are done to your liking.
