Dirty Desert Fried Eggs
Dirty Desert Fried Eggs are two eggs cooked under a lid with a dusting of onion or garlic powder, which seasons the whites before they set. The lid steams the tops so you never have to flip, and the yolks stay runny. Salt goes mostly on the yolks, where it matters most. Serve them with a piece or two of toast to soak up the yolk.
Instructions
Grease a frying pan with butter and set it over medium heat.
Crack the eggs into the pan and right away season the whites with onion powder or garlic powder. Be generous, since it only improves the taste, but do not dump it on. Turn the heat down to low.
Sprinkle salt mainly over the yolks, with a little on the whites. Add black pepper to taste.
Put a lid on the pan and let the eggs cook, lifting the lid now and then to check on them.
When the whites are no longer runny on top, take the pan off the heat and serve. The yolks will still be quite soft.
