Drover's Damper

Drover's damper is a traditional Australian bread, baked by stockmen on the trail straight in the coals of a campfire. This is the richer version, made when butter and milk were on hand, and it needs only five pantry ingredients and no tin or oven. The loaf is cooked in hot ash, so the charred crust gets peeled away and the soft crumb underneath is the part you eat, best with golden syrup.
Instructions
Stir the salt and the sugar into the flour in a large bowl.
Rub the butter into the flour with your fingertips until the mixture looks evenly crumbly.
Pour in the milk and mix until you have a medium-soft dough that holds together without being sticky.
Turn the dough onto a flat surface and knead it lightly until it is smooth.
Pat the dough into a round loaf shape.
Set the round directly on hot coals or hot ash and cook for up to 40 minutes at most. The crust will blacken as it cooks.
Break off and discard the burnt outside, then eat the soft inside. Serve with butter, golden syrup or jam.
