Dump Cake

Dump cake is a layered fruit dessert that you build straight in the baking dish, with no mixing bowl and no batter. Canned pineapple and cherry pie filling go in first, then dry yellow cake mix and dotted butter, which melts down into the mix and bakes into a soft, golden crust. Pecans on top add crunch. It also works in a Dutch oven over coals, which suits camping.

Instructions

Heat the oven to 350°F. If you are baking in a Dutch oven, put the empty pot in the oven to preheat and then grease it. If you are using a pan, grease a 13x9-inch cake pan instead.

Pour in the undrained crushed pineapple, juice and all, and spread it into an even layer across the bottom.

Spoon the cherry pie filling over the pineapple and spread it evenly so the pineapple is covered.

Sprinkle the dry cake mix over the cherries in an even layer. Do not stir anything, since the layers are meant to stay separate.

Dot the surface with the butter, so the melting butter can moisten the cake mix as it bakes.

Bake at 350°F for about 50 minutes.

Scatter the chopped pecans over the top. Serve the cake warm or at room temperature.

Without a conventional oven, cover the filled Dutch oven and set it on a bed of coals, with more coals on the lid. Use very few coals underneath and more on top, and stand a glass of water in the middle of the pot to help it bake evenly.
