Egg in a Mist
Egg in a Mist is a baked egg dish with the yolks tucked under a cloud of cheesy whipped white. Using all four eggs whole but splitting them is the clever part: the yolks stay rich and soft below while the whites, folded with grated cheese, turn light and slightly crisp on top. It needs only six pantry ingredients and one dish, so it suits a quick supper or a simple brunch.
Instructions
Rub a shallow baking dish with butter so the eggs will not stick. Put the egg yolks into the dish.
Stir the salt, pepper, milk and a little of the grated cheese into the yolks.
Whip the egg whites until they hold a stiff froth. Lightly fold the rest of the grated cheese into the whites, taking care not to knock out the air.
Pile the cheesy whites on top of the yolks in the dish.
Bake the whole dish in a moderate oven until the topping is set and lightly colored.
