Firecracker Grilled Shrimp
Firecracker Grilled Shrimp is a simple skewer recipe built around a short marinade and a hot charcoal fire. The shrimp are a meaty 21/25 count, so they stay juicy while the outsides pick up a light char. Lighting the coals in a chimney starter instead of using lighter fluid keeps any chemical smell off the seafood. Four shrimp per skewer makes turning easy, and the whole batch cooks in minutes.
Instructions
Pour the marinade into a gallon-size zip-top bag. Add the shrimp and toss them until each one is coated, then refrigerate for at least 30 minutes.
Lift the shrimp out of the bag and discard the leftover marinade. Thread 4 shrimp onto each skewer.
Light a charcoal grill with a chimney starter rather than lighter fluid, and let it heat to medium high. Put the grate back in place and lay the skewers on it.
Cook the shrimp, turning them often, until they are pink and lightly charred in spots. Slide the shrimp off the skewers, throw the skewers away, and serve the shrimp warm.
