French Onioned Chicken
Photo: Daderot, CC0
French onioned chicken is a baked chicken breast dish with a crunchy coating made from crushed French-fried onions. The onions do the work of breadcrumbs and seasoning at once, so the only other things you need are a beaten egg to make them stick and an oven. Prep takes about ten minutes, and the chicken bakes in twenty, which makes this a practical choice for a quick weeknight dinner for four.
Instructions
Heat the oven to 200°C and line a baking sheet with parchment.
Dip each piece of chicken breast in the beaten egg, then press it into the crushed French-fried onions. Turn it until it is well coated on all sides.
Set the coated chicken on the lined baking sheet. If you are using paprika, dust a little over the top.
Bake for 20 minutes, until the coating is crisp and the chicken is no longer pink on the inside.
Serve hot.
