Fried Bread

Fried bread is a quick skillet bread made from just flour, milk and hot bacon fat. The dough is a thick batter, spooned straight into an iron skillet, where it turns brown and crisp underneath in minutes. It is mostly a breakfast dish, eaten the way you would eat biscuits, with butter, jam or gravy. If you want to stretch the bacon fat, half olive oil works too.
Instructions
Mix equal amounts of self-rising flour and milk in a bowl. The batter should be about as thick as pudding, so stir in a little more milk or flour until it reaches that consistency.
Put enough bacon fat in an iron skillet to keep the dough from sticking, and heat it until it is very hot.
Drop spoonfuls of the dough into the skillet. Fry until the underside is brown and crisp.
Turn each piece over and keep frying until it is cooked through and browned on the second side.
