Fried Cheese Balls with Sausage

These sausage and cheddar balls come together from six pantry ingredients and can be fried or baked, depending on how much oil you want to deal with. Cracker crumbs and a little flour bind the raw sausage and cheese, so there is no egg to fuss with. Choose mild or hot sausage to set the heat. They also freeze uncooked, which makes a batch easy to keep on hand.

Instructions

Combine the cheddar, flour, salt, sausage and cracker crumbs in a large bowl. Mix thoroughly with your hands until the mixture holds together evenly.

Shape the mixture into balls about 1 inch (2.5 cm) across.

To fry, pour vegetable oil into a skillet to a depth of about ¾ inch (2 cm) and heat it. When the oil is hot, add the balls without crowding the pan.

Cook over medium-high heat, turning the balls so every side turns golden brown. Lift them out and drain on paper towels.

To bake instead, preheat the oven to 375°F (230°C). Set the balls on ungreased cookie sheets.

Bake for 15 minutes, or until the balls are golden brown.

To freeze, shape the balls and freeze them uncooked. Thaw them before frying or baking as described above.
