Fried Eggs

Fried eggs are a quick breakfast that is ready in about 5 minutes and needs only a pan, a spatula and a few pantry items. The whole skill is in the yolk: fresh eggs hold their shape better and break less, and a few seconds on the flip decides whether you get a runny, jammy or firm center. Serve with toast, or break the yolk for sandwiches so every bite gets some.
Instructions
Melt the butter or warm the olive oil in a pan over low to medium heat.
Crack the eggs into the pan and let them fry until the yolks begin to harden at the edges. You will see the yolk color lighten when this happens.
For sunny side-up eggs, do not flip them. Use slightly lower heat and cover the pan with a lid for part of the cooking, until the white is cooked and the yolk is still runny.
For over eggs, slide a spatula under each egg and flip it. Cook 10 seconds for over-easy, 30 seconds for over-medium, or up to 1 minute for over-hard.
Season with salt and pepper to taste and serve right away. If you are unsure, cook the eggs a little longer, since runny uncooked white is usually unwelcome.
