Fried pita with eggs turns a single stale flatbread into a quick one-pan breakfast. This is a westernized take on a Yemeni dish. The pita is torn and fried in olive oil until crisp, then the eggs are scrambled right through it, so you get crunchy edges alongside soft, set egg. It needs five ingredients and one skillet, and it works well for a solo meal.

Instructions

Set a heavy skillet over medium-low heat and warm the olive oil until it is hot.

Tear the pita into small pieces and drop them into the oil.

Cook the pieces, stirring often, until they are lightly browned and crisp to the touch.

Crack the eggs into the pan and scramble them together with the bread until the egg is set.

Season with salt and ground black pepper to taste, and serve while hot.
