Fried Unripe Plantain (Nigerian Green Plantain)

Fried unripe plantain is a Nigerian side made from green plantain, which stays firm and savory instead of turning sweet. Because the fruit is unripe, the rounds fry up with a mild, starchy bite closer to a potato than a banana. Seasoning with ground pepper and salt before frying keeps things simple. Serve it hot next to fried yam and egg sauce, or with fried potatoes.
Instructions
Cut the peeled unripe plantain into small rounds. Season them with ground pepper and salt to taste, tossing so every piece is coated.
Pour enough vegetable oil into a pan for deep-frying and heat it.
Lower the plantain rounds into the oil and fry them, turning as needed, until every side is golden and the pieces are cooked through.
Lift the plantain out of the oil and serve it while still hot, alongside fried yam and egg sauce.
