Turkey and Potato Stew
Turkey and potato stew is a practical way to turn leftover cooked turkey into a full pot of food. The turkey simmers with cubed potatoes, carrots and green beans, and a spoonful of starch gives the broth a light body. Paprika and black pepper season it, while onion, bell pepper and parsley go in late so they keep some freshness and texture.
Instructions
Put the cooked turkey and the peeled, cubed and rinsed potatoes in a pot. Pour in enough water to cover them and cook for a few minutes, until the potatoes have softened.
Add the diced carrots, green beans, paprika, black pepper and starch. Stir well and cook for 2 minutes, so the starch begins to thicken the liquid.
Stir in the sliced onions and the seasoning cubes, then add salt to taste. Mix until the cubes have dissolved into the stew.
Add the chopped bell pepper and cook for a few more minutes, until it has lost its raw edge.
Stir in the parsley and take the pot off the heat. Serve the stew hot.
