Fusion Spice Cookie (Gluten-Free)

This gluten-free cookie gets its character from Chinese five-spice powder, which brings warm notes of cinnamon, clove and star anise to a simple sugar cookie. Three teaspoons in the dough make the spice easy to taste against the sweetness. A packaged gluten-free baking mix keeps the work minimal, and the sugar-coated balls bake in just a few minutes. Instructions

Heat the oven to 350°F.

Beat the sugar, egg and shortening together in a bowl until the mixture is smooth and well combined.

Add the gluten-free baking mix and the five-spice powder. Stir until everything comes together into a dough with no dry patches.

Pinch off teaspoon-sized pieces of dough and roll each one into a ball. Roll every ball in sugar until it is coated all over.

Set the balls on a baking sheet and bake at 350°F for 5 to 6 minutes. The cookies are small, so watch them closely toward the end of that time.
