Mascarpone Mac 'n Cheese
Mascarpone Mac 'n Cheese is a baked macaroni casserole that gets its light, airy texture from whipped cream folded into the sauce. The base is a blond roux enriched with mascarpone and heavy cream, reduced by half so it coats the pasta thickly. A little sugar and a pinch of salt keep the mascarpone tasting rich and gently sweet. In the oven the whipped cream puffs the top into a soft, bubbling crust.
Instructions
Melt the butter in a large saucepan over medium heat. Whisk in the flour and cook, stirring, until the paste turns a light blond color.
Add the mascarpone, sugar, salt and the 2 cups of heavy cream. Bring the mixture to a boil and let it bubble until it has reduced by half.
Take the pan off the heat and gently fold in the whipped cream, keeping as much air in it as you can.
Spread the cooked macaroni in the bottom of a 9x13-inch baking pan. Pour the creamy mixture over the pasta.
Bake in a 350°F oven for 25 minutes, until the top is bubbling and puffed up. Remove from the oven and serve.
