Garlic Croutons

Garlic croutons from stale French bread are cheaper and better than anything from a bag. Here the minced garlic steeps in olive oil first, then gets strained out, so the bread takes on a clean garlic flavor without any burnt bits in the pan. A short stint in the oven dries the cubes until they crunch. They are the classic finish for a Caesar salad.
Instructions
Pour the olive oil into a shallow bowl over the minced garlic and let it sit. The longer it soaks, the stronger the garlic flavor will be.
Preheat the oven to 350 °F (~180 °C).
Strain the garlic out of the oil and pour the oil into a frying pan. Add the bread cubes and toss them until every piece is coated with oil.
Spread the oiled cubes on a baking sheet and sprinkle them with salt. Bake for 10 minutes, or until they are crisp and dry all the way through.
