Gizdodo (Nigerian Gizzard and Plantains)
Gizdodo is a Nigerian party dish of chicken gizzard and fried ripe plantain in a spiced pepper sauce. The gizzard is first cooked with curry and thyme, then fried until dry and brown, which gives it a firm, chewy bite. Sweet plantain softens the heat of the scotch bonnet. It is a staple beside small chops at celebrations and also works with any cooked rice.
Instructions
Put the gizzard in a pot with the onion, seasoning cube, curry powder and thyme. Cook over medium heat until the gizzard has taken on the seasoning.
Blend the bell peppers, scotch bonnet, tomatoes, chopped onion and ginger into a coarse paste. It should still have some texture rather than being smooth.
Heat vegetable oil in a saucepan and add the diced onion and garlic. Fry until softened, then stir in the blended pepper mixture and cook for about 10 minutes.
Heat more oil in a pan and fry the diced plantain. Lift it out and set it aside.
Fry the cooked gizzard in the same oil until it is dry and browned, then pour off any excess oil.
Add the cooked pepper mixture to the gizzard and fry together for a short while so the flavors mingle.
Gently stir in the fried plantain so the pieces stay whole. Simmer for a few minutes and adjust the salt and seasoning to taste.
Take the pan off the heat and serve with rice.
