Rocky Road Ice Cream
Rocky road is a chocolate ice cream studded with marshmallows and nuts, and this version makes a small batch from scratch. The base uses cocoa powder dissolved into warm milk, so the chocolate flavor is deep and not too sweet. Grated semisweet chocolate adds fine flecks, while almonds or pecans give crunch. The flavor is tied to William Dreyer and the Great Depression, around 1929.
Instructions
Combine the cocoa powder and sugar in a large saucepan. Stirring the dry ingredients together first helps the cocoa dissolve without lumps in the next step.
Gradually stir in the milk, then keep stirring over low heat until the sugar and cocoa have fully dissolved and the mixture looks smooth. Remove the pan from the heat and let it cool to room temperature.
Stir in the vanilla, salt and whipping cream, then set the base aside. Grate the semisweet chocolate on the coarse side of a grater to make shreds.
Stir the shredded chocolate, marshmallows and chopped almonds or pecans into the cocoa mixture. Pour everything into the canister of your ice cream maker.
Freeze it in the ice cream maker following the manufacturer's directions. Before serving or ripening in the freezer, stir the marshmallows through the frozen ice cream so they are spread evenly.
