Gooey Butter Cake
Gooey butter cake is a Saint Louis, Missouri specialty that starts with a boxed yellow cake mix and ends with a dense, sweet, custard-like center. The crust is a stiff dough pressed into the pan, and the filling combines cream cheese, eggs, vanilla and a full pound of confectioners sugar. It needs only one bowl for each layer, and it slices best once it has cooled and set.
Instructions
Mix the cake mix with one egg and 4 oz of the butter until you have a stiff dough.
Spray a 9 x 13-inch pan with oil. Press the dough into the pan in an even layer, pushing it up the sides to form a shallow crust.
Melt the remaining 4 oz of butter. In a bowl, combine it with the remaining 2 eggs, the cream cheese and the vanilla, then add the confectioners sugar last. Warming the cream cheese gently beforehand makes it easier to blend smoothly.
Pour the filling into the crust and bake at 350°F for 45 minutes. Let the cake cool completely so the filling can firm up before you cut it into 12 pieces.
