Grilled Cheese Sandwich

A grilled cheese sandwich is buttered bread browned in a pan around melted cheese. The cheese-to-bread ratio matters most: use enough cheese that the bread never overwhelms it, and adjust for how thick and dense your loaf is. Shredded cheese melts more evenly than slices and lets you stir in diced onion, leek or garlic first. Pressing the sandwich with a spatula keeps the crust crisp and the center fully melted.
Instructions
Set a skillet, frying pan or griddle over medium heat. Spread butter on one side of each slice of bread and lay both slices in the pan, butter side down.
Check the slices now and then. When the buttered sides are browned, flip one slice over, lay the cheese on it, and set the other slice on top with its butter side facing up.
Press the sandwich down with a spatula so it compacts and the cheese makes contact with the bread.
When the underside is browned enough, flip the sandwich. Once both sides are browned, take it off the heat, cut it and serve.
For an oven version, preheat the oven to 150°C (300°F) and butter both sides of each bread slice. Sandwich the cheese and any fillings between the slices and set the sandwiches on a baking sheet.
Bake for 10 to 15 minutes, flip the sandwiches, and bake for another 5 to 10 minutes, or until the bread is as browned as you like.
