Gurudi (Nigerian Coconut Biscuit)

Gurudi is a Nigerian coconut biscuit made from just four ingredients: fresh coconut, cassava starch, sugar and a pinch of nutmeg. The starch binds the finely shredded coconut into a thin dough, so there is no flour, egg or butter in the mix. A low oven dries the squares slowly until they turn golden and crisp, leaving a sweet, toasty coconut flavor. Potato or corn starch will work if you cannot find cassava.

Instructions

Crack the coconut open gently and pull the white meat away from the shell. Shred it finely with a grater or in a food processor.

Mix the shredded coconut with the sugar, cassava starch and nutmeg in a bowl. Stir in water a little at a time until the mixture comes together as a single ball of dough.

Roll the dough out thin on a clean surface. Cut it into squares and lay them on a buttered baking tray.

Bake the squares at 150°C (300°F) for about 20 to 25 minutes, until they are golden brown and crisp.

Take the tray out of the oven and let the biscuits cool completely before eating, since they firm up as they cool.
