Hake in Herby Breadcrumbs
Hake in herby breadcrumbs is a simple baked fish dish with a crisp, golden crust. The coating is blitzed in a food processor with fresh herbs such as parsley or tarragon and a spoonful of pine nuts, which gives it a gentle nutty flavour and a crunch that plain crumbs lack. The mild white fish stays tender underneath. Any other white fish works too, and the recipe scales easily from two servings to more.
Instructions
Heat the oven to gas mark 4.
Put the breadcrumbs, herbs, pine nuts, salt and pepper in a food processor and blend them together, adding the oil last. The mixture should end up slightly moist, not dry and sandy.
Dip each hake fillet in the beaten egg, then press it into the breadcrumb mix. Turn it over so the coating is even on all sides.
Lay the fillets in a gratin dish and drizzle a little oil over the top.
Bake for 20 minutes, until the breadcrumbs are browned.
Sprinkle a little lemon juice over the fillets and serve with a dressed salad.
