Habichuela con dulce is a sweet, creamy Dominican dessert made from red kidney beans, traditionally cooked for Good Friday. The beans are puréed and strained, then simmered with two kinds of milk, cinnamon and cloves until they turn into a spiced, pudding-like cream. Small cubes of sweet potato add body, raisins add chew, and milk cookies on top soften as you eat. It is good hot or cold, and the recipe feeds a crowd.

Instructions

Blend the cooked kidney beans with the water they cooked in until you have a smooth purée.

Pour the purée through a strainer into a pot so the bean skins stay behind.

Stir in the sweetened condensed milk, evaporated milk, vanilla, salt, sugar, cubed sweet potato, cinnamon sticks and cloves.

Simmer over low heat until the sweet potato is fully cooked and tender. Stir now and then so the bottom does not catch and stick.

Add the raisins and simmer for 10 minutes more. If you like your cookies soft, you can stir them in at this point too.

Take the pot off the heat. If you prefer, fish out the cinnamon sticks and cloves.

Spoon the beans into bowls and set milk cookies on top. Serve warm or chilled.
