Parmesan encrusted tilapia is a quick baked fish with a crisp, savory crust made from crushed croûtons. Garlic-flavored croûtons do double duty here, giving the coating crunch and seasoning in one step, while the Parmesan adds salt and a nutty edge. Tilapia is mild and lean, so the cayenne in the crumbs comes through clearly. The butter and olive oil help the crust brown in the oven without any pan frying.

Instructions

Stir the salt, cayenne, black pepper, crushed croûtons and Parmesan together in a shallow dish. Set this coating mixture aside.

Brush the fillets all over with melted butter. Press both sides of each fillet into the croûton mixture until evenly covered, then let them rest for 2 to 3 minutes so the coating sticks.

Dip each coated fillet briefly in olive oil and lay them on a shallow roasting pan. Bake in a 400°F oven for 11 to 12 minutes.

The fish is done when it turns opaque and flakes easily when you test it with a fork. Serve warm.
