Halo-halo is the Filipino shaved ice dessert whose name means mix-mix, and it earns that name with a tall pile of sweet beans, jellies and fruit. Ube jam and ube ice cream give it a purple base, while cubes of leche flan add a rich, custardy layer. Evaporated milk poured over the ice melts into everything. Stir it all together before the first bite and eat it quickly.

Instructions

Set out two serving bowls or tall glasses. Spread a layer of shaved ice over the bottom of each one.

Divide the chickpeas, red mung beans, nata de coco and kaong between the two servings, spooning them over the ice. Add the ube jam on top of the sweetened fruits and beans.

Place a scoop of ube ice cream in each serving, along with a cube of leche flan. Pour the evaporated milk over both bowls so it runs down through the ice.

If you are using pinipig, scatter it over the top just before serving. Serve right away and mix everything together with a spoon before eating, as the name suggests.
