Nigerian Barbecued Chicken Wings

Nigerian barbecued chicken wings are a spiced, crisp-edged finger food that also works as a side dish. The rub is unusual because it mixes flour and cornmeal with ginger, paprika, black pepper and a little sugar, so the coating clings to the skin and browns as it cooks. In Nigeria the wings are often served next to jollof rice or fried rice, and they also stand alone as a snack.
Instructions
Put the flour, cornmeal, black pepper, salt, sugar, ginger powder and paprika powder in a bowl and mix them into an even dry rub.
Add the chicken wingettes to the bowl and rub the mixture into the meat with your hands. Keep going until every piece is completely coated.
Cover the bowl and set it in the fridge. Let the chicken marinate for 1 hour.
Arrange the wingettes on a baking tray or on a grill. Bake or grill them until the meat is cooked through, which takes about 45 minutes in the oven.
