Halva (Wheat-based)

This wheat halva is a soft, warm sweet made from only four pantry ingredients: flour, fat, sugar and water. The flour is toasted slowly in butter for 40 minutes, which turns it golden and gives the finished halva a nutty, caramelized depth that plain sugar syrup could never provide. It needs patience and a steady stirring hand, not special equipment, and it is served warm, shaped into small balls with a wooden spoon.

Instructions

Melt the butter or margarine in a saucepan over very gentle heat. Stir in the flour and cook for 40 minutes over low to moderate heat, stirring as it goes, until the mixture turns golden brown.

When the flour begins to look light golden, put the sugar and water in a separate saucepan. Boil gently until the sugar has dissolved and the liquid forms a syrup.

Pour the syrup into the pan with the browned flour and simmer for 20 minutes. The mixture will thicken into a soft, spoonable mass.

Scoop out small portions with a wooden spoon and shape them into balls. Set them on a serving plate and serve warm.
