Shrimp Scampi Angel Hair Pasta with Lemon and Pine Nuts
This shrimp scampi pasta gets dinner on the table in under 20 minutes by starting with a packaged garlic and butter shrimp scampi. Angel hair cooks in just 4 to 5 minutes, and a cup of its starchy water loosens the buttery sauce so it coats every strand. Lemon zest and juice add sharpness, while toasted pine nuts and chopped parsley bring crunch and a fresh, green finish to each bowl.
Instructions
Bring a large pot of cold water to a boil and salt it generously.
Add the angel hair and cook, stirring now and then, until al dente, which takes 4 to 5 minutes. Scoop out about 1 cup of the cooking water, then drain the pasta.
Cook the shrimp scampi in a large skillet, following the directions on the package.
Stir the lemon zest and juice into the shrimp in the skillet.
Add the drained pasta, the reserved pasta water, the parsley and the pine nuts. Toss everything in the skillet until the pasta is evenly coated in the sauce.
Season with salt and pepper to taste. Divide the shrimp and pasta among warm bowls and serve right away.
