Hasude is an Albanian dessert made from little more than cornstarch, butter and sugar. The cornstarch is stirred into hot melted butter and cooked until it turns yellow, which gives the pudding a rich, toasted base. A plain sugar syrup poured over the top soaks into the shaped portions. It suits cooks who want a sweet dish with a short ingredient list and no eggs or milk.

Instructions

Melt the butter in a pot over medium-high heat. Add the cornstarch a little at a time, stirring it in as you go.

Once all the cornstarch is in, keep cooking and stirring until the mass turns yellow. Stir in some of the sugar to sweeten it, saving the rest for the syrup.

In a separate pan, make a syrup from the remaining sugar and the water.

When the mass has finished cooking, shape it with a spoon or with plastic molds. Pour the syrup over the shaped pudding before serving.
