Roasted Spiced Chicken Drumsticks

Roasted spiced chicken drumsticks need only four pantry spices and a hot oven to turn out deeply colored, crisp-skinned meat. The paprika gives the skin its red-brown finish, while onion powder and chili powder add savory depth and a little heat. Drying the chicken before oiling is the one step that matters most, since it lets the skin crisp instead of steam. Prep takes ten minutes, and the oven does the rest.
Instructions
Stir the paprika, onion powder, chili powder and salt together in a bowl until the blend is even in color.
Heat the oven to 400°F.
Pat the drumsticks dry with paper towels. Dry skin browns and crisps far better than damp skin.
Rub the drumsticks with olive oil, then roll them in the spice blend until every side is well coated. Set them in a baking dish.
Bake until the skin is browned and crisp, about 25 minutes. Serve the drumsticks hot.
