Henry Thiele's Pancake

Henry Thiele's Pancake is a German-style oven pancake from a Portland, Oregon restaurant that served it starting in the 1930s. The restaurant was demolished in the 1990s and its site is now Thiele Square, but this version lives on as a New Year's Day tradition. The pan is started on the stove and finished in a 500°F oven, and the pancake is rolled up and dressed with lemon, maple syrup and powdered sugar.
Instructions
Heat the oven to 500°F.
Stir the milk, salt and sugar together in a bowl. Add the flour a little at a time, mixing as you go, then mix in the eggs until the batter is combined.
For each pancake, melt 2 Tbsp of the butter in a pan. Pour in about 1¼ cups of batter. As it starts to cook, gather the batter up in a few places with your spatula to form ridges.
When the batter has the look of medium scrambled eggs, set the pan in the oven for 5 minutes.
Take the pan out, flip the pancake over in the pan, and return it to the oven for another 2½ minutes.
Remove the pan from the oven. Add a generous amount of lemon juice and a small amount of maple syrup, then roll the pancake into a cigar shape. Finish with more lemon juice, more maple syrup and a dusting of powdered sugar, in that order, and eat it right away.
