Sopaipillas (Latin American Fried Dough)
Sopaipillas are fried dough triangles that need only pantry staples and a pot of hot oil. The dough is leavened with baking powder and enriched with a little shortening, so there is no yeast and no long wait, just a short rest under a towel. Rolled thin and cut into quarters, the pieces fry up golden and crisp at the edges. Dust them with cinnamon sugar or drizzle honey over them while warm.
Instructions
Combine the flour, salt, baking powder, shortening and warm water in a bowl. Knead the mixture until it comes together into one smooth round ball of dough.
Cover the dough with a clean towel and let it rest for 10 to 20 minutes.
Divide the dough into balls about 2 to 3 inches across. Roll each ball out until it is 8 to 12 inches in diameter, then cut the round into quarters.
Deep fry the pieces in hot oil until they are golden brown, turning each one once during cooking.
Lift the pieces out and drain them on paper towels. While they are still hot, sprinkle them with a mixture of sugar and cinnamon.
Serve warm, either plain or drizzled with honey or strawberry syrup.
