Herrencreme is a German dessert of vanilla-style custard lightened with whipped cream and spiked with rum. The pudding is cooked from a packet of custard powder, which keeps the work simple and the texture reliably smooth. Cooling it under cling film prevents a skin, so the cream folds in cleanly. Grated chocolate adds bitterness against the sweet base, and you control how much rum goes in. It feeds ten and needs only a short cook.

Instructions

Put the milk, sugar, salt and custard powder into a saucepan. Cook over medium heat, stirring constantly, until the mixture has thickened into a pudding.

Lay a sheet of cling film directly on the surface of the pudding so no skin forms. Leave it until it has cooled completely.

Spoon the cooled pudding into a bowl. Stir in rum and chocolate, tasting as you go, until the balance suits you.

Fold the whipped cream gently into the pudding until no streaks remain and the mixture looks light and even.

Cover the bowl and chill it in the fridge for about 2 hours. Serve cold.
