Honey Mustard Salmon
Honey mustard salmon needs only three ingredients and about 40 minutes from fridge to table. The coarse-grained mustard adds sharp bite and texture that plain honey lacks, and coating the fillet on both sides keeps the fish moist while the glaze sets. A short spell under the broiler finishes it with a sticky, lightly browned crust. Mix the glaze to your own taste, sweeter or tangier, and it suits any size of fillet.
Instructions
Heat the oven to 350°F/180°C and set a rack near the top.
Rinse the salmon and pat it dry with paper towels. Run a finger along the flesh and pull out any pin bones you find, then cut the fillet into portions if you want them.
Stir the honey and mustard together in a bowl, using 3 parts honey to 2 parts mustard. Taste it and adjust the balance until it suits you.
Spread the mixture generously over the top of the salmon and underneath it as well, so the fish is coated on both sides.
Bake on the top rack for about 15 to 18 minutes. Cook toward the shorter time if you like the center moist and translucent, and toward the longer time for fish that flakes fully.
Switch the oven to broil and put the salmon under it for 2 to 3 minutes. Watch it closely and take it out as soon as the glaze bubbles and darkens, before it begins to char.
