Homemade Applesauce

This applesauce is made in one pot with a potato masher, so there is no blender to wash. Half the sweetening comes from a sugar substitute, which keeps the added sugar low while the lemon juice holds the apple flavor bright. Mashing leaves a little texture rather than a smooth paste. It is a natural partner for latkes at Hanukkah, and it works just as well cold from the fridge.

Instructions

Put the chopped apples in a large non-stick saucepan. Add the water, sugar, sugar substitute, and lemon juice, and stir to combine.

Bring the mixture to a boil, then cover the pan and lower the heat to medium-low.

Cook for about 10 minutes, until the apples are tender and give way easily when pressed with a spoon.

Mash the cooked apples with a potato masher until they break down into a purée. Stir in the cinnamon or apple pie spice.

Serve the applesauce warm or cold.
