Honey Apple Glazed Pork
Honey Apple Glazed Pork is a 3 pound pork butt roast coated in a mustard and sage rub, then finished under a spiced applesauce glaze. The roast cooks alone for 30 minutes first, so the surface sets before the glaze goes on and the sugars in the honey do not scorch during the long bake. Cinnamon and nutmeg keep the sweetness warm rather than sticky. It feeds six, and sweet potatoes and green beans suit it well.
Instructions
Heat the oven to 325°F (about 165°C). Line a roasting pan with foil and coat the foil with cooking spray.
Stir the pepper, flour, mustard, sage and salt together in a small bowl to make a dry rub. Press the rub over the pork roast, then set the roast in the prepared pan.
Bake the roast for 30 minutes. While it cooks, stir the applesauce, cinnamon, honey and nutmeg together to make the glaze.
Take the roast out of the oven and spread the glaze over the top. Return it to the oven and bake for about 50 to 60 minutes more, until a thermometer pushed into the center reads 165°F (74°C).
