Double Ka Meetha (Hyderabadi Fried Bread with Syrup and Nuts)

Double ka meetha is a Hyderabadi dessert that turns a plain loaf of bread into something rich and fragrant. The slices are fried in ghee until golden, then soaked in a thickened milk syrup flavored with ground cardamom and khoa, the concentrated milk solids that give the sauce its body. Pouring the syrup over the bread while it is hot helps it absorb properly. Almonds, cashews, pistachios and raisins finish it, and it is served chilled.
Instructions
Cut the crusts off the bread slices, then cut each slice into four pieces.
Fry the bread pieces in ghee until they are golden brown on the outside.
Stir the sugar into the water to make a syrup, then add the milk. Boil the mixture until it begins to thicken.
Grind the cardamom seeds to a fine powder. Stir the powder and the khoa into the thickened milk until the mixture is well combined.
Lay the fried bread pieces out on a flat tray. While the bread is still hot, pour the syrup over it so it soaks in.
Scatter the raisins and nuts over the top, then chill the dessert in the refrigerator before serving.
