Holzknechtnocken (Austrian Boiled Dumplings)
Holzknechtnocken are lumberjacks' dumplings from Ebensee in Austria, made from just flour, salt and boiling water. The hot water gives a dough that is easy to knead, and the two-step cooking is what makes them: boiled until they float, then fried in lard until golden. Loggers once made them in the forest for days at a time. Pair them with sauerkraut for a savory plate or stewed apples for a sweet one.
Instructions
Put the flour and salt in a large bowl and pour in the boiling water. Knead the mixture until it comes together as a dough.
Shape the dough into dumplings. Drop them into a pot of boiling water and cook them until they rise to the surface, which tells you they are done.
Melt lard in a heavy-bottomed skillet with deep sides. Add the boiled dumplings and fry them until they are golden.
Serve the dumplings hot with sauerkraut or steamed apples.
