Idiyappam (South Indian Rice Noodles)
Idiyappam is a South Indian breakfast of steamed rice noodles, made from nothing more than rice flour, water and salt. The dough is pressed into fine strands straight onto banana leaves or into an idli pan, then steamed until set. Raw rice flour gives them a soft, tender bite. Serve them with egg curry or kadala curry, or do as some households do and dip them in fresh coconut milk sweetened with sugar.
Instructions
Stir the rice flour together with the hot water and salt until no dry flour remains.
Knead the mixture until it forms a smooth dough with no cracks or lumps.
Sprinkle a little of the grated coconut over banana leaves. Press the dough through an idiyappam presser or a sieve onto the leaves in thin strands. You can also press the strands straight into an idli pan and skip the leaves.
If you like, scatter a little more grated coconut on top of the strands before steaming.
Steam the noodles for 5 to 10 minutes, until they are set and cooked through. Serve warm.
