Ifinkubala is a Zambian snack of mopane worms fried in a little oil until they turn crisp and golden. Mopane worms are the caterpillars of an emperor moth that feeds on mopane trees, and they are eaten across southern Africa for their high protein content. Instructions
Heat the vegetable oil in a frying pan or skillet over medium heat.
Add the mopane worms to the pan in a single layer if you can, and let them fry until the underside turns golden brown.
Turn them with tongs or a spatula and fry the other side so they cook evenly. They are ready when they look golden and feel crisp, and they must be cooked thoroughly.
Lift the worms out of the pan and spread them on a plate lined with paper towel to soak up the extra oil.
Salt them to taste while they are still warm. Dust with a little ground paprika if you want extra flavor.
Serve right away with a cold drink, since they lose their crispness as they sit.
